Good Gravy, episode 1

I love my parents – they’re hilarious and adorable and they’re best friends and huge nerds, and they compliment each other in a million different ways. But my favourite yin/yang quality of theirs has to do with my favourite breakfast: biscuits* and gravy.

My mom is the cook in the family. She reads cookbooks for fun, re-creates recipes after eating a dish at a restaurant, and has a vault of self-learnt recipes that impossibly blends complete trash food and gourmet dining. With the exception of something we now call “Corn Loaf”, a corn and cheese side dish that was supposed to be a fluffy Mexican corn dish that somehow went wrong and solidified mass of corn and goo that we could almost cut in slices, I can’t remember a single dish my mom has made that I haven’t liked. No one makes a grilled cheese sandwich or a plate of scrambled eggs like my mom. And I’ve tried for years to replicate my all time famous dish of hers, Baked Chili Spaghetti, to no avail. I’ve been asking for about ever for her to write these recipes for me, but I always get the same answer – “I’m not sure – I just make it. Just take X and X and X and go with it!” She’s a jerk.

My dad, on the other hand, passed his cooking skills down to me. We both need detailed instructions and tools. But we both looooove to eat. So it all balances out.

One of the biggest things I miss about living with my parents is the food. Particularly the big Sunday or holiday breakfasts. “Breakfast Skillets,” which are individual skillets layered with a fried egg, hash browns, sausage gravy, and topped with cheese and crumbled bacon. French toast fried perfectly with crispy edges and a soft center and topped with maple syrup and powdered sugar; Bacon and egg fried rice; but the best of it all is biscuits and sausage gravy.

Mom makes a helluva good gravy. I’ve never actually seen her make it – it just always appeared at the same time as the scrambled eggs did – both hot and ready to eat, with only one pan being used. It’s a mystery to me. For all the cooking talent my mom has, she can’t form a biscuit to save her life. They come out lumpy, malformed, a bit like a gargoyle fist – if that gargoyle fist was slammed in a door a few times. They break when you touch them and they’re pretty dense.

That’s where my dad comes in – his gravy may taste floury or be too watery, but his biscuits are always geometrically perfect with flat golden tops, and have the most perfect smooth and fluffy texture. I remember watching him make the dough, flouring the counter top, rolling the dough with a rolling pin, and using the same cup he always used to stamp out the biscuits. It’s the only cooking ritual I remember my dad having in the kitchen – besides the giant bowl he used to eat cereal.

With my parent’s powers combined, they make one awesome sauce breakfast. And it’s just one of those little anecdotes about their relationship that I think is too adorable.

I was looking through our fridge this morning and noticed our bacon was about to go off, and I immediately thought about making gravy with it. Even though I never made bacon before. So I called the Breakfast Masters for a crash course in Gravy 101 – what kind of spices to use, what kind of utensils, and basically the most important aspect of gravy – which is continuous whisking.

Now, this is for bacon gravy, which isn’t as good as sausage gravy – (which I’m attempting next week), so this is an abbreviated method (mostly so I won’t forget when I try again next week)

Step 1: Fry lots of bacon. Sing the bacon some sweet songs to encourage all the grease to collect in the pan (you only have to do this in Australia, where the bacon isn’t NEARLY as greasy as it is the US)

Step 2: Once bacon is at desired doneness (extra crispy for me, please – I want that shit to shatter in melty bacony goodness), remove from pan and wrap in aluminium foil to keep warm.

Step 3: On medium heat, melt some butter (see above note about Bacon not being greasy enough)

Step 4: Sprinkle a couple table spoons of flour over the butter and whisk that up with either a whisk, a wooden spoon, or the bottom of a flat rubber spatula – whatever won’t scratch up the pan

Step 5: Whisking constantly, cook the flour and butter for a few minutes until it’s really clumpy. If you don’t cook it long enough the flour will taste raw.

Step 6: Add milk – I eyeballed it by adding 1/2 cup at at time. And whisk whisk whisk.

Step 7: Season with salt, pepper, whatever else you’d like. I threw in some cajun seasoning.

You can add more milk if it’s too thick, more flour if it’s too watery

I served mine over toast with the fried bacon. And it tasted just as good as my mom’s, which made me feel like a double champ – 1) because I tried something new and it wasn’t a disaster, and 2) because it was delish. It felt like a taste from home.

But I also feel like a world of heart clogging, thigh jiggling, gravy topped food opportunities have opened up for me – and that’s hella exciting.

*I should clarify for my non-Americans that I mean scones – biscuits in the States are the equivalent of scones in Australia. The first time I mentioned biscuits and gravy at work I was met with some grossed out and confused looks.

“Like… biscuits? Covered in gravy?”

Waiting for the Butter to Soften

Last week, I set out to make cookies. And by set out, I mean I had a sudden attack of restlessness and felt an obsessive need to make something – anything – just as long as it involved measuring and baking. I landed on cookies because they’re the easiest thing to make when I’m scattered and NEED TO DO SOMETHING. Thus, I set out to make easy, no fail, made them 500x, have the recipe memorised chocolate chip cookies.

I didn’t have a lot of chocolate chips, and only half the butter I needed, so instead of going to the store (which would take too long), I decided to only make half a recipe. I weighed the butter and cut it into cubes. I knew the butter wasn’t soft enough and if I didn’t wait an hour, I’d make a giant mess of sugar and butter crumbs when I tried to cream it (oh, the perils of hand mixers and shallow mixing bowls). So I waited maybe 5 minutes while I measured everything else and prepped the pans. And then I couldn’t wait any longer so I got to creaming.

As predicted, butter and sugar went flying. Instead of waiting for the butter to soften, I mashed it with the potato masher, and tried to “fold” the sugar into the butter. It still made a mess. Instead of waiting for it to soften again, I added a bit of milk. Bingo. The sugar and butter creamed without making a mess, and I didn’t have to wait an hour (even though by this point I had already wasted another 15-20 minutes). I mixed in the dry ingredients, the chocolate chips, and scooped them into the pan.

I thought something was strange when the dough was sticking to my fingers, and not really staying in a ball like shape. That’s weird, but whatever. I put the pan in the oven to bake, and 10 minutes later, was welcomed to this:

A burned disc of butter sugar shit. And the next pan was the same.

The disappointment was palpable.

I quickly realised what happened – in my ADD MILK haste, I needed to compensate with a bit more flour – which I didn’t. I also chopped it up to being bad at math and not reducing the ingredients correctly. I reduced the flour from 2 1/4 cups to 1 cup, 2 tbsp, which Google and a quick fact check by Leah confirmed was correct. But later that evening when I was washing up, I discovered that I used a 1/2 cup measure that I thought was a 1 cup measure. So really, I’m good at math, and bad at reading.

Small mistake. It sucks. If you’ve been following along the blog recently, I haven’t exactly been batting a thousand this year. I’ve felt more way failure than win, like a lot more failure. And as I looked at this pan of greasy, dried elephant dung that I created, something that I’m normally amazing at, and yes, shamefully scooping it up with a fork and eating it in much the same manner as the way a dog eats its own vomit, I knew I really need to get my own shit together.

I make small mistakes that avalanche into big mistakes because I rush. Because I’m ridiculously anxious and impulsive. It’s OMG I HAVE TO DO THIS NOW I DON’T CARE IF IT’S NOT READY inside my head and then FUCK WHY DIDN’T I JUST DO THAT THING I NEEDED TO DO when it turns out badly. It was like this pan of baked diarrhea was a direct metaphor for my life – hurrying and making small mistakes just to get it done rather than taking the time to do it right.

If my internal failure cycle were an Ouroboros, it would look like this:

It’s a vicious, vicious cycle. Anxiety > Rush/Stall > Small Mistake Avalanche > Fail

Most of the time, I’m of the “OMG, I really need to do this, but I see these issues will prevent this from being the best it can be, so I’m going to take X step and X step so I don’t make a mistake.” persuasion. For the past few months though, I’ve just overlooked all of that so I can get something done and feel some sort of personal gratification or sense of accomplishment. I’ve fallen into this “oh it’s just a small mistake so it won’t matter” kind of thinking that just doesn’t work at all. Because small mistakes turn into an avalanche. So even if I’m accomplishing things, those things aren’t the best – or they’re just wrong. Which makes me feel like more of a failure.

And I’m desperate to learn how to derail the cycle. How to instil thoughtful, deliberate, mindful actions in everything I do, instead of rushing to get to the finish line. After all, I’m not winning any ribbons by finishing projects, goals, or baked goods that look like shit – literally.

So on Sunday, I decided I needed to regroup, since Saturday was a panicky waste of good breathable oxygen. So I made of list of everything I needed to do, gave myself time frames to do some chores while Skyping with Cara, get a giant chunk of work done, and then I went to the store to buy more cookie ingredients. This time, I measured everything carefully, I let my butter soften on the counter, I made way less of a mess, and the cookies turned out crispy on the edge, soft in the center, all over golden, and delish:

I was even able to finish my weekend work with a little more satisfaction than I normally have. And I think it’s because I took my time to slowly and considerately do everything. The cycle of OMG GET IT DONE is a hard one to beat, and over the past week, I’ve realised I just need to take it one day at a time. Of just being careful and aware – I mean, I want to be HIGHLY AWARE, but I’ll accept general awareness and perseverance for now.

Basically, the point of this blog is I learned a lesson:

If you don’t wait for the butter to soften, you’ll end up with shit.

Also,

Eating half a pan of melted butter sugar dough will make your pants suddenly shrink over night.

Searious Mussels

So Joel and I have been on a kick watching Kitchen Nightmares lately. It’s like the Hoarders of food shows, and I love it. Even if I do feel just the slightest bit shamed because the food Gordon Ramsay turns his nose at I’m usually like “DAMN THAT IS COVERED IN CHEESE AND IT LOOKS GOOD.” I have the most sophisticated pallet. Clearly.

But on one of the episodes, Ramsay was trying to choke down some mussels marinara*, and I was instantly hit with a craving for mussels. I’ve never made mussels on my own before, and I think I can count on one hand how many times I’ve eaten them. But the craving was sudden, ridiculous, and insatiable. One of those “if we don’t make these tomorrow I will cry” kind of cravings – seriously, Joel came home on Sunday night after an unsuccessful mission to find fresh mussels and I did cry**.

A few years ago when Joel stayed with me in the States, we took a trip to Montauk, NY. It was November, so there were exactly 18 people in the Hamptons, and even fewer in Montauk. We stayed in a shifty motel close to the beach, and googled restaurants until we found one that was locally famous and had the most insane name ever – Shagwong Tavern. I would have eaten there based on the name alone, but the reviews boasted the best seafood on the island, so onward we went.

Being near the Hamptons, I was expecting something a little more upscale. What we arrived at was a dank, dark, tavern that had been ridden hard and put away wet. One of those old restaurants that’s been around so long and will never not smell like cigarettes and bad decisions. We were welcomed to queaky plastic seats with American Indian fabric covered booths, crappy tables, and decor that hadn’t been updated since the mid 80’s. The bar was across from the dining room, where the clientele looked like they hadn’t been updated since the mid-80’s either – a mullet or two, curls crunched up with gel, guys wearing flannels with the sleeves cut off making out with girls in high waisted tight jeans, getting drunk and rowdy and playing pool, and everyone drinking Budweiser from the bottle. Needless to say I was no longer worried about wearing a zip up hoodie to dinner.

We ordered a bottle of wine, some entrees, and the steamed mussels to start. I wasn’t sure how to eat them, but I wanted to impress Joel so I just went with it. And fuck if they weren’t amazing. We ate until we were blind and made a lot of passing judgements at people. I think there was almost a bar fight at one point. And I remember being scared to use the bathroom. It’s one of our fondest date memories.

Since Monday was a public holiday (woo!), we woke up and set out on a quest for fresh mussels. And later that night, we were eating a pan full of deliciousness. Joel came up with a garlic and white wine sauce that was basically magic, we had fresh sour dough, and it was damn good. We even cleared off the table to eat like real grown ups.

Who knew mussels were so easy to make? All in all it was about 30 minutes of prep and cook. Normally, here is where I’d post the recipe, but Joel was at the helm and I was catching up on some work, so I have no idea what happened. Except vegetable stock was included at some point. And garlic. Oh, and white wine. And it took like 14 minutes to steam the mussels.

So there you go, world’s easiest recipe. Get some mussels and some wine and go to town!

 

*Until I moved here, I always thought marinara sauce was a plain tomato sauce. Nuuuupe. Continuing the seafood adventures kick, Joel bought a bag of fresh seafood mix and made a seafood marinara on Monday, complete with this badass tomato sauce that I once again didn’t pay attention to as he was making it, because I was once again catching up on work. But it was one of the best sauces I’ve ever had. I believe stock was once again involved. And parsley. And onions. And garlic.

So there you go, another awesome recipe to try this week.

**But really, what hasn’t made me cry this week? I need a vacation.

***No shame in my pun game.

Bob Ross to the Rescue

I love Bob Ross.

I love the simplicity of his show. I love how the sound of his voice is like a someone wrapping a warm blanket around you. I love his positivity, his “maybe… maybe…”. I love the way he says “whiiiish wiiiiiish wiiiiish” when he uses the fan brush to make waves. Every touch and every sound he makes is soft, gentle, and deliberate, no matter how “accident” he says they are. Whenever I’m watching The Joy of Painting with Bob Ross, I’m transported to a rainy day in elementary school, watching him in art class while we waited out the clock for Christmas Break. The whole show has a calming, tranquillizing effect on me, and I couldn’t be happier that there’s a whole heap of them streaming on Netflix.

I’ve had one of those days – can’t get out of bed, can’t have 1 thought without 47 thoughts behind it, can’t find a coping mechanism besides sleeping that helps, just feeling restless and anxious and essentially paralysed. Eventually, I convinced myself to take a shower, and I sat down to scroll through Netflix, desperate for something to take the edge off. And I saw that Beauty is Everywhere collection of Bob Ross episodes. And I was all HECK YES.

Five minutes into the first episode, he was painting some clouds (using the number 2 brush in a circular motion so that “it looks like there’s a lot happening”), and he said it was going to take a while to finish. Then, he says “… while I’m doing this, I want to show you a video of some little characters that are living with me – baby squirrels. And I want to show you how we feed them.”

And then there was a video of Bob Ross holding baby squirrels and feeding them from a syringe attached to a creepy looking extra long nipple.

BABY SQUIRRELS.

I g-damn love squirrels. They’re wiley, they’re fluffy, they make really questionable decisions, and they’re adorable. When I was 14, I created a character called Squirrel Man, a Jewish Crime Fighting Squirrel who wore tighty whities and a red cape, and never went anywhere without his truth seeking acorn. I have a bit of an obsession with them. And very sadly, they’re not in Australia.

Bob Ross and baby squirrels. Two of my most favourite things. It was like God reached down, patted me on my head and told me, “everything is going to be ok.”

And it was. For a little bit anyway, which is cool.

This may look like an ordinary photo – but look closely.

Can you see ALL the dirty dishes I used to make baked spaghetti last night, the wrecked stove top and counter top, or the piles of recycling I wasn’t able to take down because of the rain? Nope. Neither can I.

There are few things better than coming home after a hard day to an already cleaned house. Especially when you made 99% of the messes. Oh, and delicious treats left for you on the counter – not bad.

Cleaning up without asking and leaving treats you’ve been talking about all week are little things, and I believe in the little things. A random sweet message via text. A surprise treat at the end of a bad day. A un-prompted back scratch. A handwritten note. Remembering to serve ice cream with a little spoon, because they don’t like the big spoons with ice cream. Tucking in the bed sheets because you know they love it. A simple “I’m sorry” after a misunderstanding. Hell, the fact that I can even bring it up when my feelings are hurt is a little thing that I think is the biggest thing.

I live for these sweet gestures. Faults and cracks in the little things have been my downfall in the past. And now they just make me grateful to be where I am, and who I’m with. I came home wanting to eat my feelings. Now I’m gushing about love.

It’s the little things.

In the Name of Lamps

Around 6:30 on Friday night, it started to rain. And it has barely let up since. Besides getting so soaked on Friday night that my Chucks still aren’t dry, it’s been fantastic.

Joel was shooting all weekend, so I thought I would be stuck to the couch, reading and catching up on shitty TV as kept my fingers crossed that our balcony door didn’t leak again. I slept in a bit on Saturday morning, warmed up all my clothes in the dryer for 25 mins (I’m pretty sure this is the closest I’ll ever get to being back in the womb – that 3-5 minutes of intense, soft warmth is so worth it.), made coffee, and burrowed into the couch to re-watch Game of Thrones. Changed my mind to Dance Moms. Changed my mind to Mad Men. Changed my mind to Teen Mom 2. Changed my mind to Downtown Abbey. And finally I was all SILVER STALLION! It took me 30 mins to figure out what to waste my precious weekend and brain cells on, but I finally did it. Also, as you can clearly see that I have no middle ground when it comes to TV – it’s shit, or it’s amazing.

I was looking forward to some serious couch time. I even had a stack of books ready to go. But, as I finished my coffee, and was about half-way through The Silver Stallion, I got hit by a wave of restlessness – which I was hoping wouldn’t happen. I’ve been feeling better in terms of anxiety, but I’ve still had my moments where I feel it edging up to me. And I feel it mostly when I’m sitting around and supposed to be doing nothing. And my go-to coping mechanism is cleaning, deep cleaning, and obsessively rearranging. Call me Monica.

The dishes were done, the counter tops deep scrubbed, fridge cleaned out, rubbish sorted, clothes put away, bathroom cleaned, and I was thiiiiis close to vacuuming and dusting. And then I decided to brave the wind and rain because I really needed a lamp for my bedroom. And a pair of sweat pants that didn’t fall down each time I stood up. With the mantra of Treat Yo’self running through my head, I bundled up and made the trek to the mall.  I was drenched when I got home, with a giant bag of groceries, homewares, and a lamp. But I was pretty happy with the results:

I also picked up a little basket for my books – and I like how the wire almost camouflages the sea of power cords.

I also bought some fruit and veg baskets, since our fruit and veg drawer is actually a film drawer.

 

I haven’t had a bedside lamp since I moved to Australia. It hasn’t been too high on the priority list because Joel had one, we had over head lighting, and to be honest – I’ve never bought a lamp before, beyond big paper lanterns. Lamps are things that always materialised from family members or roommates and I’ve never had to go out of my way to buy one. It felt strangely adult/First World Problem to consider each lamp and how it’d look in the room. But in the end I went with the cheapest one. And I didn’t expect Joel to care too much about the lamp either – he already had one, and lamps aren’t a big deal to him. But I finally got to hear the words I’ve been longing to hear – “I don’t usually like it when you buy baskets, but that basket is nice. I want one.” And smug Audrey felt exceptionally smug.

This morning I woke up a bit earlier, determined to enjoy the rain from my bed nest – complete with new lamp and an extra blanket from the couch – and half-way through my coffee and Dance Moms, the restless bug hit again. So I bundled up again and faced the elements for another round of lamp and basket shopping. This time I wasn’t as lucky – I was soaked by the time I got to K-Mart, and absolutely drenched from tip to toe when I got home. My umbrella was turned inside out by blowing wind so much that it’s basically broken. And it’s been 11 hours and my boots are still wet. Apparently between Saturday night and Sunday morning the weather changed from rain showers to full on cyclone. But the matching lamps and baskets are pretty awesome, so it was worth it:

So I might develop pneumonia for the sake of obsessive homewares acquirement, and I’m pretty much fine with that, because I’ve always figured that would happen to me.

Things I love: The Silver Stallion

The Silver Stallion. 

The first time I saw it, I was 10 years old, at a slumber party with a couple of my friends. Before the party began, my mom took us all to Blockbuster Video to rent some movies – because staying up all night watching movies and eating junk food is the best part of being a kid. Or a 31 year old. Who’s counting. Anway.

My mom was very adamant about us only watching age appropriate movies – which really sucked when you were trying to be the coolest 10 year old in the room and your mom won’t let you rent Interview with the Vampire. My friends and I decided on a Japanese movie about giant, homicidal dinosaurs rising from the ocean to destroy Tokyo. I think it was called Dinosaur Land or something else equally irrelevant. I remember the cover was a hand drawn image of a platysaurus in the water, with a woman hanging out of its mouth, and Tokyo visible in the background. We are all super pumped.

Mom, however, showed us a movie called The Silver Stallion. And the collective womp womp womp was heard throughout the land. Who wanted to watch a movie about horsies? There were no Brad Pitt Vampires and no people eating dinosaurs and no curse words and no possibility of seeing Brad Pitt’s naked vampire butt. LAME. But mom insisted that we would love it, and we left Blockbuster both really excited and really bummed out.

Once everyone went to bed and we had the TV to ourselves, we put in the lame horse movie to get it over with. After a few minutes of hemming and hawwing and making fun of it, the room got quiet and we were glued to the screen. When it was over, we couldn’t stop chatting about it.

The gist: An Australian movie based on a popular children’s book, made in 1993. The plot is pretty simple: an author living in the bush is writing a story about the life of Thowra, an Australian wild horse, or “brumby”, and his rise to king of the brumbies while constantly outwitting the the Man in Black, who wanted to capture him. The author’s daughter reads along with the story, and falls in love with the wild horse. In a turn of events, the daughter finds out that Thowra is real, and is devastated to hear that the Man in Black has a fail-proof mission to finally capture the wild horse. The author and her daughter wait with baited breath to hear the final fate of Thowra and his reign as king of the brumbies.

As the author narrates her story, the scenes are acted out by real horses in sequences shot amazingly in the mountains. Here’s a mash up of scenes put to the music from Requiem for a Dream, which kinda fits it perfectly (except there’s no heroin in The Silver Stallion. I mean, not that I know of)

 

It’s a dark, sad children’s story that is beautifully told – there are no silly horse voices or cheese ball animal/human friendship or “everyone is happy and learns a valuable lesson”ending. It makes you think of what separates a human from a villain. All in all, it’s just a good movie. Oh, and it stars a baby Russell Crowe as the wiley Man in Black.

We put on Dinosaurs Eat People and barely paid attention to it, because it was super lame. There were no beautiful horses running free in the mountains, no dramatic horse fights, no crazy horse chases, no subtly dark story lines, and still no chance of naked Brad Pitt vampire butt – just badly clay animated dinosaurs and badly dubbed English lines and no gorey peple eating scenes. We didn’t even finish the movie before we put Silver Stallion on again.

And thus began the obsession. I convinced my friends to pretend to be the horses in the movie and we would run around the woods making up different Thowra stories. We would watch it whenever we got the chance (I begged my parents to rent it so often that 5 years later, when I started working at Blockbuster, the manager told me on my first day that she remembered me as “the silver stallion girl”), and it became a weird thing that bonded the three of us.

My sister Mary was always horse crazy while we were growing up, and I liked horses, but I was way more into dogs, orcas, tigers, and lions. However, once I watched this magically lame horsie movie, all I could think about were horses. I started tagging along with my dad and my sister to her horse back riding lessons, and became something of a barn rat. “Can I brush your horse?” “Can I walk your horse?” “Can I clean that stall?” “Can I do ANYTHING remotely related to being near a horse?” Eventually, I started taking riding lessons too, and that was it. I was hooked. My sister and I rode competitively and basically lived at the barn for years. And funny enough, we came to own a horse who’s name was Brumbie. Go figured.

I still have a huge fondness for the flick. I own a copy and I dust it off and watch it from time to time.And this morning when I woke up and Joel had already left for work and it was cold and pouring rain, I instantly felt like watching it. So I scoured the internet and vaguely considered trecking out to JB HiFi in the rain to buy it (movie obsession turns me into a driven lunatic bent on success) until I found it on Youtube because it’s so irrelevant that not even Amazon or iTunes will stream it.

From the title card, this movie always takes me back to being a 10 year old. It makes me think of my dream of spending my days riding my horse through the country side and spending my nights pounding out stories on a typewriter as I wear a big woolen sweater – and my vampire Brad Pitt husband brings me coffee. #dreams

My first thought was “wow, I guess I didn’t really achieve what 10 year old Audrey wanted.” But then I thought more about it, and I’m actually pretty close to this dream – I mean, I live in Australia now. And I still write (kinda), and I have a big sweat shirt and a much more handsome, much cooler, non-vampire, sexy man to bring me coffee. But I did think really hard about sending my mom $200 so she can mail me my typewriter. Annnnd I may have looked up how much horse back riding lessons cost around here. Spoiler alert – they’re expensive.

Here’s to nostalgia.  Brb, I’m going out to get a big wool sweater. And maybe a horse colouring book.
